Inspired by Jack and the Bean Bowl.
Makes about 4 servings. Preparation time is about 15 minutes, or 60 minutes if you include the time it takes to cook brown rice.
Ingredients
- 1 cup long grain brown rice
- small amount of vegetable oil
- 1+ can black beans (16 oz.)
- 1 onion, chopped
- 2 cloves garlic, crushed or finely grated
- 1/2 tsp ginger, crushed or finely grated
- 1 tsp ground cumin
- 1/4 to 1/2 cup chopped fresh cilantro
- salt & pepper to taste
- mayo (or vegenaise)
- chipotle powder
- lime juice
- sriracha/chili sauce to taste
- 2 ripe avocadoes, scooped out & sliced
- fresh salsa
- mozzerella, cheddar, or nutritional yeast (optional)
- shredded romaine lettuce (optional)
Directions
Cook the rice according to its directions.
When the rice is almost done cooking, in a separate pan saute the onions & garlic in a small amount of oil, then mix in the beans with the ginger, cumin, salt and pepper.
In another small bowl, mix the mayo, chipotle, lime juice, and sriracha/chili.
To serve when everything is done, scoop some rice into a bowl, then the bean combination, then about 1/2 an avocado, salsa, cilantro, cheese/lettuce (if using), and the mayo sauce.
